

2/3 medium walla walla sweet onion
4 medium vine-ripened tomatoes
3 peppers (red, yellow, green in this case)
1 lime
cilantro to taste
a dash of salt & pepper to taste
tabasco sauce for some added heat
After the unexpected working trip to Antarctica, and the added benefit of traveling for a month, I find myself excited and anxious anticipating what waits for me around each corner of life back in North America.
